Thanks to the growing number of plant based/vegan and sustainability conscious companies that are so determined to provide the public with delicious products, it seems as though you can make anything vegan these days. This includes fantastic brunch options, like this Just Egg Vegan Quiche Recipe which includes instructions on how to make a buttery crust that would fool the biggest doubters of how amazing plant based options can be. Just Egg is great for omelettes and scrambles and it’s proven to be perfect for Quiches as well so keep this recipe handy for the next time you want to impress people with your breakfast skills.
Serves: 6 | Difficulty Level: Easy | Time: 1 hour 30 minutes
2 containers of Just Egg, Tempeh, sweet onion, tomatoes, salt, pepper, garlic powder, liquid smoke, sesame oil, powder egg replacer, flour, earth balance (enough for 10 tbsp)
-1 egg worth of egg replacer
-1 1/2 cup of flour
-1/3 cup ice water
-10 tbsp earth balance
-1 tsp salt
-2/3 cup of tempeh, broken into pieces
-2 full containers of just egg
-2/3 cup of diced tomatoes
-1/2 cup of diced onion
-1 tsp salt
-1 tsp garlic powder
-1/2 tsp liquid smoke
-1 tbsp sesame oil
Preheat the oven to 375.
Next, you will start with the quiche crust. To make the crust, allow the earth balance to soften enough so that it can blend with the flour. Use your hands to kneed the flour and earth balance until they it starts to form a ball. Add the egg and water, then the salt and continue to mold with your hands and it should become a large ball that you can easily work with your hands. Grease a pie tin and roll the dough out and use your fingers to press it against the tin so that the whole inside is covered.
In a medium frying pan, add the tempeh, liquid smoke and sesame oil. Then heat at medium and stir the tempeh for 4-5 minutes, until it begins to brown. Put the Just egg, salt, garlic powder, tomatoes, eggs and tempeh into a large bowl and give it a stir. Pour it into the crust in the dish and carefully put it in the oven.
Bake for 1 hour and 15 minutes, serve warm and enjoy! You won’t even be able to tell it’s vegan, so you can save the planet and animals without sacrificing anything four your taste buds.
