Vegan Oyster Mushroom Mac n Cheese Recipe

Don’t let being vegan keep you away from delicious, creamy and cheesy mac n cheese. Add in extra flavor with this vegan oyster mushroom mac n cheese recipe, and serve as a side (if you are able to stop eating it)

Serves: 5 | Difficulty Level: Easy/Medium | Time: 1 hour

Shopping List:

Macaroni Pasta (1 pound), vegan cream cheese, earth balance, any vegan cheese of choice, 2/3 pound of oyster mushrooms, sesame oil, soy sauce, old bay spice, 2 12 ounce cans of coconut cream, Earth balance, Nutritional yeast, Garlic powder, salt, Flour, Vegetable broth

Ingredients/Measurements:

-1 pound macaroni pasta

-1 tbsp soy sauce

-3/4 cup of vegan cream cheese

-1 tbsp sesame oil

-8 tbsp earth balance butter

-1 tsp salt

-2/3 cup of vegan cheese of choice

-1 tbsp old bay spice

-2/3 pound of oyster mushrooms, separated and torn into 1/2 inch pieces

-1 tbsp garlic powder

For the Cream Sauce:

1 ? 12 ounce can of coconut cream

1 tbsp nutritional yeast

2 tbsp earth balance

? cup of vegetable broth (have some more on hand just in case)

1 tsp garlic powder

1 tsp salt

1/3 cup of flour

Directions:

Bowl a pot of water and cook the pasta according to the instructions. Strain and set aside.

Make the Cream Sauce:

In a sauce pan, heat the vegan butter over medium.  When it has melted, add the coconut cream.  Let it heat for 1 minute, then add the flour, and using a metal whisk, begin quickly whisking for another 2 minutes.  The cream should thicken up, make sure all of the flour is blended in. Add the vegetable broth, keep whisking.   Add the Nutritional yeast, garlic powder and salt, continue to whisk.  If the sauce begins to bubble, reduce the heat, and continue to whisk for another 3-4 minutes, until it is thick and creamy. If you feel that it has gotten too thick, add a bit more vegetable broth and keep whisking.

Add Earth balance and cream cheese to the pot, and return the pasta to the pot as well. Stir so that all the noodles are coated. Add the garlic powder and salt Pour the completed cream sauce on the pasta and stir it well.

In a small sauce pan, add the mushrooms, sesame oil, soy sauce and old bay seasoning and cook at medium for 4 minutes until the mushrooms begin to release moisture. Add them to the mac n cheese, stir and add any other seasonings you like. Serve warm and enjoy! In my dairy and meat eating days I would have never thought that a vegan oyster mushroom mac n cheese recipe would be something I was working on, but I am damn sure glad that I did. I hope you love it too.

Wondering how oyster mushrooms got their name? The latin name is actually Pleurotus ostreatus, but the Oyster name as it is known in the western world is based on the physical resemblance to the bivalves AND the fact that they have a seafood sort of taste.
