Best Vegan Mushroom Soup Recipe

There are many soup recipes out there in the internet land, but this one uses three types of mushrooms and has taken years to perfect, so I can confidently say that it is the best vegan mushroom soup recipe I have ever had. If you are a mushroom fan I know you will love it, you just need a knife, pot and food processor to make it happen. I can’t wait for you to try it!

Serves: 6 | Difficulty Level: Easy | Time: 45 minutes

Shopping List:

2 pounds oyster mushrooms, 1 pound button mushrooms, 4 portobello mushrooms, vegetable or mushroom broth, garlic cloves, white onion, coconut milk, sesame oil, coconut aminos, cornstarch, flour, salt, pepper, earth balance

Ingredients/Measurements:

-2 tbsp Earth Balance

-2 pounds of oyster mushrooms, separated

-1 pound of white button mushrooms, washed and chopped

-4 portobello mushrooms, sliced and chopped into 1 inch pieces

-1/2 cup of chopped white onion

-3 cloves of garlic

-1/4 cup of cornstarch

-1 12 ounce can of coconut milk

-6 cups of vegetable broth

-2 tsp salt

-1/2 tsp pepper

-1 tbsp sesame oil

-1 tbsp coconut aminos

-1/3 cup of flour

Direcctions:

In a large soup pan, heat the Earth balance. First thing to go in is the chopped onion, and full cloves of garlic. Cook over medium for 5-6 minutes, until the onions begin to soften and become translucent. Once they are, add the salt and pepper.

The next step is to add all the mushrooms and coat them with the earth balance by stirring them thoroughly. Then add the sesame oil and coconut aminos and stir and cook for about 8 minutes, until the mushrooms release their moisture. Add the cornstarch and coat the mushrooms by stirring.

Add the coconut milk and the broth and bring it to a boil. Stir in the flour and reduce heat slightly, letting it simmer for 20 minutes. The flour will thicken it soup up, so if you feel like it is still too thin, add a tiny little more flour.

Remove from the heat, and allow it to cool so you can handle it without getting brunt. Pour it into a blender or food processor and puree for 30 seconds.
