It is impossible for me to pick my favorite soup because there are so many incredible options, but I have to say that a good French onion bowl with a delicious piece of bread is at the top of the list. A lot of typical FO recipes include cream or mozzarella, but luckily there are so many plant based options these days that creating this amazing vegan french onion soup recipe possible. I can’t wait for you to try it!
Serves: 4 | Difficulty Level: Easy/Medium | Time: 1 hour
4 pounds of onions, a mixture of sweet and yellow (about 3 large of each), cornstarch, flour, vegetable broth, fresh time, earth balance, salt, garlic powder, white vinegar or rice vinegar, ciabatta roll or baguette, vegan mozzarella shreds
-3/4 cup of earth balance
-4 pounds of yellow and sweet onions, chopped through so they make onion rings
-1 tbsp cornstarch
-6 cups of vegetable broth
-2/3 cup of flour
-2 tsp and 2 sprigs of fresh thyme
-1/4 cup of white vinegar
-2-3 tsp salt, to taste
-2 tsp garlic powder
-4 pieces of a baguette or 2 ciabatta rolls, halved
-2 cups of vegan mozzarella
Dump all of the onions into a large pot. Add the earth balance and bring the heat to medium. Sprinkle in the the loose thyme, salt and garlic powder and stir the onions while the earth balance melts and coats the onions. Then you will add the vinegar. Continue to heat and stir for about 8 minutes, until the onions become translucent.
Add the sprigs of thyme to the top of the onions and cover for 5 minutes.
Stir the soup for about 2 minutes, then add the cornstarch and stir until it dissolves.
Finally, add the vegetable broth and bring to a simmer, then slowly stir in the flour, about a tbsp at a time. Continue to cook and stir for another 25 minutes. They broth should be thick and the onions totally soft.
Spoon the soup into a microwave safe bowl and top with the bread and vegan cheese. Microwave for 1 minutes and 30 seconds, allow it to cool enough to handle and enjoy warm. If you love this vegan french onion soup recipe please save it and share it with some friends! Thank you so much or reading!
