If you are a fan of calzones, pizza and/or Impossible Meat you will love this vegan mini calzones recipe. They have “Italian meat style” filling made with impossible meat, tomato sauce and vegan cheese and then they are wrapped in pizza dough (you can use my pizza dough recipe http://getmetherecipe.com/pizza-dough/ which is my absolute favorite). They are a great appetizer to share or as to use as a party food, and I can’t wait for you to try them. I made them for new years eve and no one could tell they were vegan and everyone wanted to hang out with me and be my best friend so fair warning, get ready to be the center of attention.
Serves: 3 | Difficulty Level: Easy | Time: 1 hour (if you make the dough 4 hours)
1 pound of pizza dough (or make mine at the link above), 1 pound of beef substitute, either beyond or impossible, at least 16 ounces of your favorite pasta sauce (I like Rao’s Marinara), garlic powder, yellow onion, salt, Vegan Mozzarella cheese (shredded is the easiest but if you have a cheese grater violife mozzarella block is amazing), Italian seasoning, Olive oil
-1 pound of pizza dough (either store bought or if you want to follow my recipe see link below)
-1 pound of impossible or beyond beef
-16 ounces of jar sauce
-2 tsp garlic powder
-1/2 cup of chopped onion, diced
-2 tsp salt
-1/3 cup shredded vegan mozzarella cheese
-2 tsp Italian seasoning
-1 tbsp olive oil

Preheat the oven to 425. Next, grease a muffin tin and set aside. Then roll out the pizza dough and cut it into 8 even squares, about 1/4 inch thick.
Heat the olive oil in a large frying pan over medium/high and add the onion. Next, stir and sauté them for 4 minutes until the onion pieces start to become translucent and soften. Once they are, you can add the impossible meat and all the seasoning and continue to stir and cook for 6 minutes, until the meat is browned. Then add the sauce and cheese and continue to heat while stirring so that everything is mixed together thoroughly for another 5 minutes. Remove from the heat.
Using a spoon, carefully scope the mixture into the middle of a piece of the dough. Close the edges of the dough around the filling by squeezing it with your fingers, creating a ball. Finish them by pinching the edges tightly so that none of the filling falls out. Then Repeat with each of the dough pieces.
Once each of the balls are formed, you will place each of them into one of the muffin tin cups and bake for 10 minutes. You can tell they are done when they are nice and golden brown.
