Vegan One pot Taco Pasta Recipe

If you have been following me for a while or are familiar with my recipes then you know how much I love one pot recipes. Because you are only using one pot rather than a whole bunch of dishes, it is way easier to clean up. I also love the way that the flavors blend and form when everything is cooked all together. I came up with this particular vegan one pot taco pasta recipe when I was on a major “taco food” style kick and I love how it came out.

Serves: 6 | Difficulty Level: Easy | Time: 35 minutes

Shopping List:

1 pound of penne or similar style pasta, Enchilada Sauce, 2 packages of Impossible or Beyond Meat (20 ounces total), 12 ounce can diced tomatoes, canned refried beans, taco seasoning, onion, chopped, garlic seasoning, olive oil, corn based salsa, bell peppers (fresh or frozen are fine), vegetable broth, vegan Mexican cheese, vegan cream cheese

Ingredients/Measurements:

-1 pound of pasta

-1/2 cup of enchilada sauce

-2 packages of Impossible or Beyond Meat

-1 12 ounce can of diced tomatoes

-1/2 cup of refried beans

-1/2 cup chopped onion

-2 tsp garlic powder

-1 Tbsp taco seasoning

-1 Tbsp Olive oil

-1/2 cup of corn based salsa

-3 cups of vegetable broth

-1 cup of shredded vegan cheese

-2/3 cups of bell peppers

Directions

This is a wonderful, beautiful and amazing one pot recipe! So you just need one pot.

Add the olive oil, onion, “meat”, and seasonings to the large pot. Stir and heat until the “meat” starts to brown. Make sure your stir so it doesn’t stick to the bottom of the pan, and cook for about 6 minutes.

After this it is so easy. Put everything else in the pot, stir thoroughly, then raise the heat to high and allow it to boil. Once it is boiling, cover and lower heat to med/low and let it simmer for about 20 minutes, stirring every few minutes, until the pasta is cooked and has absorbed the broth.
