Vegan Shepard’s Pie with Impossible Meat Recipe

When I think of comfort food, mashed potatoes and savory pies are at the forefront of my mind. I’ve always loved Shepard’s Pie and I didn’t want to miss out on this fantastic dish when I made the decision to go plant based. Thanks to Impossible foods company and my determination to make any meal vegan, I was able to create my vegan shepard’s pie with Impossible Meat recipe. It takes a bit of time, but it’s very easy and when you take your first bite you will see that it is worth every minute.

Shopping List:

Gold Potatoes, canned baked beans, 2 packages of Impossible or Beyond Meat, barbecue sauce, bread crumbs, salt, garlic powder, earth balance, onion, pepper


-2 pounds gold potatoes, chopped into cubes

-1/2 cup of earth balance

-1 12 ounce can of baked beans

-2 packages of Impossible or Beyond ground beef

-1/3 cup of barbecue sauce

-1/3 cup of bread crumbs

-3 tsp salt

-3 tsp garlic powder

-1/4 cup of chopped onion

-1 tsp of pepper split into 2 1/2 tsps


-Preheat the oven to 400. Grease a casserole pan and set aside.

Fill a large pot 2/3 of the way with water and add all of the potato cubes. Bring to a boil and let it go for 25 minutes. You will know it is done when the potatoes are soft.

In a large bowl, mix the impossible/beyond meat, 1 tsp salt, 1/2 tsp pepper, 1 tsp garlic powder, barbecue sauce, breadcrumbs together using your hands, so that everything is blended together. The breadcrumbs and the barbecue sauce should hold it together. Dump it into the casserole pan and flatten it out so that it is even.

Pour the can of baked beans over the “meat” mixture and make sure it is evenly spread.

When the potatoes are done, mash them together with the earth balance, 2 tsp salt, 2 tsp garlic powder and 1/2 tsp pepper. They should become creamy after a minute or 2.

Spread the potatoes over the baked beans, and again make sure that it is even. Bake for 40 minutes, slice and serve warm.
